Whenever you’re at a diner or restaurant and order eggs, they will often ask you how you want your eggs. Here’s a breakdown of what options you can choose from:
- Sunny side up: This version is fried on one side of the egg while the top is left raw. It typically has crispy edges and when the yolk is broken oozes out.
- Over easy: This egg is cooked on both sides, but still has a runny yolk when you cut it in half. The whites are slightly firm.
- Over medium: This is the Goldilocks of eggs because it’s cooked on both sides with firm whites, but jammy or gelatinous eggs. The white are completely cooked and the edges are nice and crisp.
- Over hard: Just like the name implies, over hard eggs are very firm egg yolks that are completely cooked through.
What’s the Difference Between Over Easy and Over Medium Eggs?
Don’t let anyone tell you different because there is definitely a difference between over easy and over medium eggs. And the truth is in the yolk! Over easy eggs are fried much more quickly than over medium eggs because you want to keep that runny and rich yolk when you cut into it.
On the other hand, over medium eggs are cooked until the center is slightly firm to the touch, but still, feel soft in the center. When you cut open an over medium egg, the center should be gelatinous and jammy.

Depending on what you cook an over medium egg with (like oil or butter), the amount of calories one cooked egg can be is anywhere between 85-120 calories. If you want a healthier meal, use avocado oil, which is known for its anti-inflammatory benefits.
